With all things pumpkin right now plus we know this time of year can be hectic, we came up with this easy and delicious breakfast. Just make these oats the night before and in the morning you will have a few extra minute to enjoy your breakfast. That is if you don't push the snooze button too many times. :) We get it, we do it too sometimes!! Enjoy!
½ cup unsweetened coconut milk
½ cup rolled or old fashioned oats
¼ cup pumpkin puree
¼ tsp pumpkin pie spice
¼ tsp cinnamon
¼ tsp vanilla extract
1 tsp chia seeds
2-3 tsps pure maple syrup
1. Mix all ingredients together in a small container (we like mason jars)
2. Cover and store overnight in the refrigerator
3. Top with chopped walnuts or any nut you like and raw honey if you'd like it a bit sweeter.
